What you will need:
- Fresh spinach ( Optional frozen)
- White onion or yellow
- One green bell pepper
- Shredded Cheese : Mozzarella/Parmesan ( optional shredded smoked cheddar). ½ cup each
- 4 boneless skinless chicken breast
Instructions:
- Sauté the diced onions, and diced peppers in 1 table spoon of vegetable oil ( approximately 5 minutes)
- Add fresh spinach sate till wilted and reduced down
- Transfer to bowl and let cool
- Cut a pocket into the chicken breast
- When onions, spinach and peppers have cooled add shredded cheese and mix thoroughly
- Stuff chicken with spinach and cheese
- Season with Pepperazzi Seasoning
- Bake at 375 degrees for about 25-30 minutes ( if smoking I recommend using apple wood and smoking at 350 degrees till chicken breast reaches 165 degrees)
- Rest for about 5 minutes , serve and enjoy.
